Ingredients
  

1 crispy baguette (or Vietnamese banh mi bread)

  • 2 eggs

1 tsp soy sauce

  • 1 tsp fish sauce optional

1 tbsp butter or oil

  • Pickled carrots & daikon optional

Fresh cucumber slices

  • Fresh cilantro

Chili sauce or mayonnaise

  • Salt & pepper to taste

Instructions
 

Step 1: Prepare the bread

  • → Lightly toast your baguette or Vietnamese banh mi bread until crispy outside and soft inside.

Step 2: Cook the eggs

  • → Heat butter or oil in a pan over medium heat.
  • → Crack in the eggs and fry until the whites are set but yolks are still a little runny (or fully cooked if you prefer).
  • → Season with soy sauce, fish sauce, salt, and pepper.

Step 3: Slice the veggies

  • → Thinly slice cucumber.
  • → Prepare pickled carrots and daikon if available (store-bought or homemade).

Step 4: Assemble the Banh Mi

  • → Slice the toasted bread lengthwise.
  • → Spread chili sauce or mayonnaise inside.
  • → Add the fried eggs, cucumber slices, pickled veggies, and fresh cilantro.

Step 5: Serve your Vietnamese breakfast

  • → Close the sandwich and gently press.
