McGriddle Muffin Bites You'll Absolutely Love

Ingredients
  

Pancake Mix (2 cups): Use bisquick, Kodiak protein pancake mix, or your favorite brand. Look for a mix that yields fluffy, slightly sweet pancakes.

  • Milk 1 cup: Dairy or non-dairy milk works. Milk hydrates the mix and keeps the batter light.

Egg (1 large): Adds structure. For extra make protein McGriddle , use 2 eggs.

  • Maple Syrup 2 tbsp: Real or imitation. This gives the signature McGriddle sweetness.

Breakfast Sausage (12 patties): Use ground breakfast sausage or pre-formed sausage patties. Pork or turkey both work.

  • Cooking Spray or Butter: Prevents sticking. Grease each muffin cup.

Cheddar Cheese (optional, 1 cup shredded): Adds a savory layer.

Instructions
 

Step 1: Preheat and Prep

  • Preheat oven to 400 degrees F (204°C).
  • Grease a 12-cup muffin tin with softened butter or cooking spray . Set aside.

Step 2: Cook Sausage

  • Heat a skillet over medium heat.
  • Cook sausage McGriddle muffins patties 3–4 minutes per side, until no pink remains.
  • Drain on paper towels and set aside to cool slightly.

Step 3: Make Pancake Batter

  • In a large mixing bowl, whisk pancake mix, milk, egg, and maple syrup until smooth.
  • If using protein pancake mix, adjust liquid per package instructions.

Step 4: Assemble Muffin Bites

  • Spoon 1–2 tablespoons of batter into each muffin cup—just enough to cover the bottom.
  • Place one sausage patty on top of the batter in each cup.
  • Add 1–2 tablespoons of batter over each patty until it reaches just below the rim.
  • If using cheese or eggs, sprinkle a bit on top now.

Step 5: Bake

  • Bake at 400°F for 12–15 minutes, until a toothpick inserted in the center comes out clean and the tops are golden.
  • Let cool 2 minutes in the pan, then transfer to a wire rack.

Step 6: Serve or Store

  • To Serve: Drizzle with maple syrup or tuck into a breakfast sandwich.
  • To Store: Let the McGriddle Muffin Bites cool completely, then store them in an airtight container in the refrigerator for up to 5 days to keep them fresh.
  • To Freeze: Place cooled bites in a freezer bag. Freeze up to 1 month. Reheat in microwave 20–30 seconds from frozen.
