Ingredients
1 cup cooked quinoa
1/2 cup roasted sweet potatoes
1/2 cup chickpeas, roasted
1/4 cup cherry tomatoes, halved
1 tbsp tahini dressing
1 tbsp chopped parsley
Instructions
Preheat the oven to 375°F (190°C).
Toss sweet potatoes and chickpeas with olive oil, salt, and paprika.
