Ingredients

Ravioli (Fresh, Store-Bought, or Frozen Ravioli)

  • If you have fresh ravioli cook it according to the package instructions.
  • If you prefer store-bought ravioli toss it in a drizzle of olive oil before cooking to add extra flavor and prevent sticking.

Olive Oil

  • Use a small splash of olive oil in your pan before adding other ingredients.
  • This helps sauté your garlic and sun-dried tomatoes without burning them.

Baby Spinach

  • Stir in the spinach toward the end of cooking so it wilts slightly and retains its bright color.
  • This adds a fresh vibrant note to the dish.

Sun-Dried Tomatoes

  • Incorporate these after heating the garlic so they have time to soften and infuse the oil.
  • They bring a sweet tangy depth that balances the creamy sauce.

Garlic

  • Add garlic to the pan early cooking it until it becomes fragrant.
  • Be careful not to brown it too much as this can make the dish taste bitter. Just a light sauté ensures the garlic stands out.

Instructions

Boil the Ravioli

  • Fill a large pot with water and bring it to a rolling boil for the refrigerated ravioli.
  • Add your ravioli and cook until just tender (follow package instructions for timing).
  • Drain and set the ravioli aside.

Sauté the Garlic and Wilt the Spinach

  • Heat a drizzle of olive oil in a pan over medium heat.
  • Add minced garlic and sauté until it turns fragrant (about 30 seconds to 1 minute).
  • Stir in a handful of baby spinach and let it wilt slightly, blending it with the garlic.

Prepare the Creamy Sauce

  • Slowly pour in heavy cream, then reduce the heat to low and let it simmer for a few minutes.
  • Gradually stir in grated parmesan, allowing the sauce to thicken.
  • Mix in a handful of sun-dried tomatoes for added flavor and color.

Combine the Ravioli and Sauce

  • Once the sauce reaches a smooth, thick consistency, gently fold in the cooked ravioli according to the package instructions.
  • Let everything meld for a short time so the pasta absorbs the flavors of the sauce.
