  • ½ cup creamy peanut butter: The star ingredient that infuses every bite with nutty rich goodness. Use natural peanut butter for a less processed option.
  • Optional: ¼ cup rolled oats or seeds: For a hearty textured finish on top of the loaf.

Toppings and Mix-Ins (Optional)

  • 1-2 tablespoons of jelly or jam: Swirl it into the dough for a sweet surprise.

Activate the Yeast

  • Sprinkle the active dry yeast over the top and let it sit for 5–10 minutes until it becomes frothy. This step is crucial for ensuring the yeast is active.

Mix the Dry Ingredients

  • In a large mixing bowl, whisk together the whole grain flour and salt.
  • If you’re adding rolled oats or seeds for texture, stir them in at this stage.

Combine Wet and Dry Ingredients

  • Create a well in the center of the dry ingredients and pour in the yeast mixture, olive oil, and peanut butter.
  • Use a wooden spoon or your hands to mix everything until a shaggy dough forms.

Knead the Dough

  • Transfer the dough to a floured surface and knead for 8–10 minutes. The dough should become smooth and elastic but still slightly tacky.

First Rise
