Ingredients

  • For the Marinade

1 pound chicken tenders:

  • Choose fresh high-quality chicken for the juiciest results. If you don’t have chicken tenders, slice chicken breasts into strips.

1 cup buttermilk:

  • This is the key to tender flavorful chicken. If buttermilk isn’t available, mix 1 cup of milk with 1 tablespoon of lemon juice or vinegar as a substitute.

1 teaspoon garlic powder:

  • Adds a subtle savory depth.

1 teaspoon paprika:

  • Enhances flavor and gives a beautiful golden color.

½ teaspoon salt:

  • Balances flavors and tenderizes the chicken further.
  • For the Coating
  • 1 cup all-purpose flour:
  • The foundation for a light crisp coating. For gluten-free options, use rice or almond flour.

1 cup seasoned breadcrumbs:

  • Panko breadcrumbs work best for extra crunch but regular breadcrumbs are great too.

½ teaspoon smoked paprika:

  • For a hint of smokiness.

½ teaspoon black pepper:

  • Adds a subtle kick to the coating.

½ teaspoon onion powder:

  • Rounds out the flavor profile beautifully.
  • For Frying

Vegetable oil:

  • Use a neutral oil like canola or sunflower oil with a high smoke point to achieve the perfect fry. You’ll need enough to submerge the tenders for an even cook.
  • Optional Ingredients for Customization

Cayenne pepper:

  • Add ¼ teaspoon for a spicy version.

Grated Parmesan cheese:

  • Mix a few tablespoons into the breadcrumbs for extra flavor.

Chopped fresh parsley:

  • Use as a garnish for a pop of color and freshness.

Instructions

Marinate the Chicken

  • In a large bowl, combine the buttermilk, garlic powder, paprika, and salt. Whisk until well blended.
  • Add the chicken tenders to the bowl, ensuring each piece is fully submerged in the marinade.
  • Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor and tenderness.

Prepare the Coating

  • In one shallow bowl, mix the flour, smoked paprika, onion powder, and black pepper.
  • In a second shallow bowl, place the seasoned breadcrumbs.
  • Set up your breading station by lining up the bowls: flour mixture first, then the breadcrumbs.

Coat the Chicken

  • Remove the chicken tenders from the marinade, letting the excess drip off.
  • Dredge each tender in the flour mixture, pressing gently to ensure an even coating.
  • Dip the flour-coated tender back into the buttermilk briefly.
  • Finally, roll the tender in the breadcrumbs, pressing to adhere the coating completely.

Cook the Tenders

  • For Frying
  • Heat 2–3 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).
  • Fry the chicken tenders in small batches for 3–4 minutes per side, or until golden brown and fully cooked (internal temperature of 165°F).
  • Transfer the tenders to a plate lined with paper towels to drain excess oil.
  • For Air Frying
  • Preheat the air fryer to 400°F (200°C).
  • Lightly spray the breaded tenders with cooking spray.
  • Arrange the tenders in a single layer and air fry for 10–12 minutes, flipping halfway through.
  • For Baking
  • Preheat the oven to 425°F (220°C).
  • Place the breaded tenders on a greased or parchment-lined baking sheet.
  • Lightly spray the tenders with cooking spray for a crispier finish.
  • Bake for 20–25 minutes, flipping halfway through.

Check for Doneness

  • Always use a meat thermometer to ensure the internal temperature of the chicken reaches 165°F (74°C).

Serve and Enjoy!

  • Arrange the chicken tenders on a serving plate and pair with your favorite dipping sauces like ranch, honey mustard, or barbecue sauce.
