Instructions

Step 1: Prep Your Ingredients

  • Before you start cooking, take a few moments to prepare:
  • Chop the onion, garlic, and bell peppers into small, uniform pieces for even cooking.
  • Slice the beef sausages into bite-sized rounds or keep them whole for a more rustic presentation.
  • Gather and measure all spices and seasonings to keep things organized while cooking.

Step 2: Sauté the Sausage

  • Heat a large skillet over medium heat and drizzle in the olive oil.
  • Add the sliced beef sausage to the pan. Cook for 5-7 minutes, stirring occasionally, until the sausage is browned on all sides and its natural juices are released.
  • Remove the sausage from the pan and set it aside on a plate.

Step 3: Build the Base

  • In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes until fragrant and translucent.
  • Toss in the diced bell peppers and cook for another 4-5 minutes, allowing them to soften slightly.

Step 4: Combine and Simmer

  • Return the browned sausage to the skillet with the sautéed vegetables.
  • Add the chopped tomatoes, smoked paprika, oregano, salt, and black pepper. Stir everything together to coat the ingredients evenly.
  • Reduce the heat to low, cover the skillet, and let it simmer for 10-12 minutes. This allows the flavors to meld beautifully.

Step 5: Garnish and Serve

  • Once the dish is cooked, remove it from the heat and sprinkle with freshly chopped parsley for a burst of color and freshness.
  • Serve hot with crusty bread, over fluffy rice, or alongside pasta for a complete meal.
