Step 1: Prepare the Ribs

  • Trim the Ribs: Use a sharp knife to remove any excess fat or silver skin from the back of the ribs. This ensures even cooking and better flavor absorption.
  • Pat Dry: Gently pat the ribs dry with paper towels. This helps the seasoning stick better.
  • Apply Olive Oil: Rub olive oil over both sides of the ribs for a base that holds the dry rub in place.

Step 2: Season with the Dry Rub

  • In a small bowl, mix the dry rub ingredients thoroughly.
  • Generously coat both sides of the ribs with the rub, pressing it in to ensure it sticks. For the best flavor, let the ribs sit for at least 30 minutes or refrigerate them overnight for deeper seasoning.

Step 3: Preheat Your Cooking Method

  • For a Smoker: Preheat to 225°F (110°C). Use soaked wood chips for a rich, smoky flavor.
  • For a Grill: Set up for indirect cooking by placing coals on one side or turning off one burner on a gas grill. Heat to 225°F (110°C).
  • For an Oven: Preheat to 300°F (150°C).

Step 4: Cook the Ribs

  • Smoker or Grill Method:
  • Place the ribs bone-side down on the smoker or grill. Close the lid and let them cook for 4–5 hours, maintaining a steady temperature. Add wood chips as needed for consistent smoke.
  • Oven Method:
  • Wrap the ribs tightly in aluminum foil and place them on a baking sheet. Bake for 2–3 hours until tender.

Step 5: Glaze and Finish

  • If you’re glazing the ribs, brush a thin layer of BBQ sauce mixed with honey over the ribs during the last 30 minutes of cooking.
  • Increase the temperature to 350°F (175°C) or place the ribs over direct heat for a few minutes to caramelize the glaze.

Step 6: Rest and Serve

  • Once cooked, remove the ribs from the heat and let them rest for 10–15 minutes. This allows the juices to redistribute, ensuring maximum tenderness.
